I would start with the little headphone adapter box if you have never built anything from scratch before. It's cheap, has no high voltage to deal with and will test/hone your basic fabrication and soldering skills.
I have a small listening room and mostly listen to vinyl through a pair of KLH model Twenty speakers. I attempted building electronics in the late 1990s early 2000s with limited success. Recently I picked up the bug again and went through a Radio Shack "learn electronics" kit and successfully built a couple of synthesizer modules from kits. I'm trying to wrap my head around tube amps, but desperately want to build one. Thank you for the YouTube channel and your generosity. I'm learning a lot!
You could try one of the tube amp kits from ebay or ali, These obviously won't perform to the same standard as Stephe's designs but the have all the parts and a fabricated chassis. I built one a couple of years ago and it was a fun project. It also gave me the confidence to carry out a few Skunkie mods to my Willsenton R8.
